WD Wines relocated our winemaking to a new, small, boutique facility of garagistes in San Mateo County. We are expanding our focus on white wines to include a blend of Malvasia, Rousanne, Marsanne, and Chardonnay along with our Sagebrush Chardonnay. We have contracted with Sara Lee’s Vineyard in the Russian River area of Sonoma County for our 2011 grapes.
These are our brix and pH with respective photos for each varietal as of September 14, 2011:
Chardonnay, clone 96: 21.27 brix, 3.12 pH
Marsanne clone PU1: 15.35 brix, 2.8 pH
Roussanne clone MPV: 13.75 brix (refractometer), 2.9 pH
Malvasia Bianca clone 03: 17.28 brix, 2.8 pH
Brix of the Chardonnay clone 96 was 22.3 on September 21, 2011. Projected pick date for our Chardonnay grapes is about 2 weeks away!
